The wines of the Domaine Ollier Taillefer – Castel Fossibus, Les Collines Rouge, Les Collines Rosé, Allegro, Grande Réserve
The Domaine Ollier Taillefer is located in Fos, in the North-West of the AOC Faugères in Hérault. A family domain passed down for 5 generations. A 36 hectares domain on a schist soil, at a 250m height. Luc and Françoise Ollier, brother and sister, chose to run this domain in organic farming
It is in 1977, that Nicole and Alain Ollier sold their first bottle, under the appellation « Vin Délimité de Qualité Supérieure » (now AOC). L’AOC Faugères was created in 1982 for the red wine and the rose, and later for the white wine in 2004.
The vines are facing South at an height that can go up to 350m depending on the plot. At the Domaine Ollier-Taillefer, the harvest is manual and the grapes are carefully separated before the fermentation.
Several grape varieties are cultivated : Grenache Noir, Syrah, Mourvèdre, Cinsault and Carignan Noir for the red wines and rose. Roussanne and Rolle for the white wines.
