The wines of Domaine Canet Valette – Antonyme, Ivresses, Une et Mille Nuits, Maghani
The Domaine Canet Valette is located in Cessenon-sur-Orb, in the appellation area of Saint Chinian, right next to the Haut-Languedoc Regional Nature Park. Marc Valette, under the watch of his grand-father, took over the domain. Marc brought his grape harvest to the winegrowers’ cooperatie of Saint Chinian for several years, until 1992.
Afterwards, he created his own domain of 12 hectares where he will vinify his wine.
Marc Valette is running the domain in organic farming. Indeed, it is hard to love his area, love his country while destroying it, also thinking about the future given to our children is important. A domain certified ÉCOCERT since 1999. The Domaine Canet Valette uses treatments made of herbal tea, the fermentation is done with natural yeast only and the use of sulphits is limited during the elaboration process of the wines.
The vinification is realised in small and open tanks. The winemaker wants to separate the grape varieties and the terroirs as much as possible to raise the range of blend possible.
The wines made of Mourvèdre, Syrah and Grenache, mainly cultivated on a clay-limestone soil, are delicate and fresh wines just like the terroir AOC Saint-Chinian, but are also typical of the domain.
