Gilles Azam is running the Domaine des Hautes Terres, located in Roquetaillade, a small village at a 400m height in Aude. The small plots of vines of the domain are on the appellation area of Limoux.
The altitude, (fresh nights and mildness during the day) enables the production of fresh and delicate wines with strong grape aromas and a high acidity.
Gilles Azam is running his domain in organic farming… But he doesn’t produce in organic for the label, but to work with respect for living being, with the help of natural yeast. A developed Leaf Area Index, a manual harvest, a controlled output, vinifications on lees in oak cask are also put in place.
All of this enable the production of delicate, digestible and atypical Languedocian wines, partly thanks to the vine cultivation rules of the A.O.C. Limoux (malbec, cabernet, merlot…). Gilles also cultivates the crémant in organic, an impressive approach !
