The wines of Domaine Moulinier – Les Sigillaires, Les Terrasses Grillées, Tradition, Rosé, Viognier
The Domaine Moulinier is located in Languedoc, at 1 km of Saint-Chinian, in Pierrerue. A 30 ha vineyard on schist, sandstone and clay-limestone hills.
In the early 80s, Guy Moulinier, who grew in Saint-Chinian, decided to restore some of the plots located on hills, abandoned by the previous generation because they were hard to work on. It is in one of those plots that he cultivated the first vine stock of Syrah in Saint Chinian.
Guy and Stéphane Moulinier are running this domain in integrated farming cultivating Syrah, Grenache and Viognier to produces wines in AOC Saint Chinian. The harvest is done early to preserve the balance between alcohol and acidity and produce delicate and fresh wines.
The Domaine Moulinier produces five cuvees. A white wine made of Viognier, a rose and three red wines made of Syrah and Grenache. The blend of these grape varieties brings complexity and balance to these wines. The cuvees Sigillaires and Terrasses Grillées are aged in barrel respectively for 12 months and 15 months.
There are also 5 hectares of olive trees in the domain, Olivière and Verdale are cultivated in this olive grove. The Domaine Moulinier deserves its name. Indeed, in occitan, the “moulinier” is the person making olive oil. The harvest is manual and is done in november to preserve the aroma of the olives.
