The Domaine du Pas de l’Escalette is a 15 ha domain with vines cultivated on terrace surrounded by low walls called “clapas”
Located at a 350 m heigth in the Larzac. Julien Zernott and Delphine Rousseau leads this vineyard in a substainable way. They work the soil with organic products only.
The vineyard is irrigated by the water source of the Larzac plateau. Half of the plot is facing East and the other half is facing West. This specific exposition makes the wines of the Domaine du Pas de l’Escalette well-balanced. Fresh and fruity wines, specific to this valley. They want to produce delicate wines with a great drinkability. On these 45 years old vines, they decided to only grow southern grape varieties : Grenache and Carignan for most of the wines, for the red wines syrah and cinsault are used.
