Château Bouïsset – Les Bécassine, le bourboulenc, les terres salées
Christophe Barbier’s vineyard is separated in two parts. One is under the appellation AOC La Clape and the other one under the appellation IGP Coteaux de Narbonne (which are former salt marshes).
At the time when the Phylloxera variety was cultivated, winemakers would immerge the vineyards under 50 cm of water for 40 days to protect and save the vineyards from aphids. This immersion was also used to lower the salt layer to prevent the grapevine from dying. Nowadays Christophe Barbier carry on this tradition and produces unique wines, mineral and salty.
